Manifesto

Just a short list of things I keep in mind while cooking, shopping, and eating. I won't try too hard to convince you these are the best, or the only way to do things. I do, however, very strongly believe in them.

  1. Eat food that looks, tastes, behaves, smells, and feels like real food. Most often that means fresher, more local, less messed-with foods. Really, it should be that simple, no? But...it's not. It is a challenge, even here in Seattle where one can find amazing and fresh fish, fruits and vegetables, freshly roasted coffee, and locally crafted beer and wine. But I promise, your stomach will be really excited, even if your wallet complains.
  2. Eat food that isn't full of creepy things. If I wouldn't voluntarily keep an ingredient in my own kitchen, I usually will choose not to eat it.
  3. Don't be a crazy person. Eat enough, not too much, not too little, and be present for all of it.
  4. Fat is not the enemy. But...it's not the only solution to make something delicious.
  5. Don't buy into fad diets or trendy food practices. I have many strong opinions on this topic, but I'm also not out to discredit your preferences, restrictions or allergies. I will not, however, label any post or recipe as "vegan," "gluten-free," or "nut-free," unless I am actually making it for someone with those preferences/conditions. I am lucky enough to not have severe allergies or medical issues (although I have a lot of preferences, and some people consider me ridiculously picky).
  6. There's always a better way to do something. If not better, then just as good but different. And maybe it works better for you. Go for it!
  7. Don't be afraid to work. Work is good. Work is honorable. You'll be glad you put in the effort when you are chowing down on something that was worth it. Or better yet, when someone you love is eating what you made!
  8. FUN. That's the best word. If you're not having fun, you're doing it wrong. Right!? Right.
